Hello, I´d like to know if you use some kind of syrup or juice to brush your cakes after baking and before decorating to make them more moist, people here in Mexico like the “wet” cakes. And if you don´t, do you have any suggestion about it? Thank you, and have a wonderfull New Year!!!
I don’t use anything, the cake turn out really moist but you can always use a simple sugar syrup like this one:

You could also add any kind of extract or zest for an extra flavor boost.
I’m so glad that I stumbled on your site! I just recently started doing cupcakes for family and friends and I’m trying to expand to include cakes. You’ve provided some great information and I look forward to reading more. I do have a quick question…do you use parchment paper in the bottom of your cake pans? I seem to have a problem with my cakes releasing from my pans. I prefer not to flour my pans but I use cooking spray and the tops always seem to stick…just the tops and not the sides.
Only for my chocolate cake, but not parchment, I’ve been using wax paper. Do you use baking spray? That’s been working really well for me.
hey! i have been a long time veiwer and have used your recipes…. i dont know how to say im a big fan, without saying im a big fan lol. but you get the gist! i was wondering, i know how to make marshmallow fondant, but was wondering if you may have come up with a way to make marshmallow butter icing? i was thinking of just throwing some marshmallows in with a white choc butter icing but i kinda wanted to take it a step further but i dont know how. it was that or just make my marshmallow and plonk it in the middle of the cake…. but i wanted the creamy moistness butter cream brings to a cake. i dont think you have anything on this topic but i would like to pick your brain and see what you think… you being all awesome and all
I tried to make marshmallow buttercream before, I thought it tasted too much like butter but my kids loved it. It’s on the Wilton website.
